Avocado Toast with the most

Yes, avocado toast is probably one of the easiest things in the world to make. There are so many different ways to put a spin on it though! So we’ve got to explore them of course. Otherwise, we’d just be slapping guac on bread, what fun is that? Eating healthy doesn’t need to be boring!

You probably noticed that this one is on a rice cake. That’s because they are a fantastic lower calorie and carb option to bread. A slice of whole wheat toast is packed with all kinds of good for you stuff like fiber though! So feel free to mix it up, cut the extra calories on the days you want, but try not to shun our grainy friends altogether!

  • 1 Avocado
  • 1 1/2 tsp lemon juice
  • 1 tbsp olive oil
  • 1/4 tsp Fresh Cracked Pepper
  • 1/4 tsp Paprika
  • Dash of Salt
  • Dash of Cayenne (optional)

While you’re only going to need 1/4 to 1/2 of your avocado, I like to make a batch with the whole avocado so there’s more pre-made for later. Just mash it all up together with a normal spoon no fancy equipment needed.

I enjoy an extra dash of pepper and paprika on top to give it a nice look. Some other fun toppings are things like –

  • Tomato slices (balsamic pairs well)
  • Smoked Salmon
  • Imitation Crab
  • Sliced or shredded Mozzarella (w. A basil leaf too if you have it handy!)
  • An egg your way
  • Bacon (I use turkey bacon!)
  • Fresh onion
  • Pico De Gallo
  • Sliced turkey or chicken
  • Salami
  • Fresh Cilantro
  • Sautéed Mushrooms
  • Jalapeño coins
  • Cucumber
  • Feta crumbles
  • Olives
  • Sautéed Spinach

Don’t be afraid to get creative! Avocado is so beautifully universal. Did you know that they have more potassium than bananas? They’re also just as good for your eyes as carrots! With so many incredible health benefits you may just want to try them every way possible to keep them steady in your diet! Get mashing guys!
