Is there such a thing as too much Pico De Gallo? Well you can decide that for yourself when preparing this delicious deviation on Huevos Rancheros. Spicy, full of protein, and veggie-fied. They make an excellent morning dish.
Now if you’ve never made your own Pico De Gallo, it’s simply equal portions of fine chopped onion, tomato, and cilantro. It pairs well with tacos too and is a fantastic topping for tortilla chips at any party! Super easy to make yourself or even easier to pick up from your local grocery store, your choice of course!
This dish starts out with two eggs your way. As you may well know, poached or boiled make for the healthiest options, but I like to opt for an easy over medium. Adjacent to our eggs we’ll be frying up our chorizo. Line both pans with a thin layer of your choice of cooking oil and fry at medium heat for roughly 5 minutes each.
Pile it on up by itself or on a tortilla! Add two tablespoons of Pico de Gallo right in top and there you have it, Huevos Rancheros for one. Breakfast is served!
